The most reliable container crops are leafy greens, herbs, radishes and bush beans. They need only 6 to 8 inches of depth, 1 to 3 gallons of mix, and 4 to 6 hours of sun, and they harvest in 3 to 8 weeks. Fruiting crops work too, but a tomato needs 5 gallons minimum, 10 is better, and 6 or more hours of direct sun. Under 3 hours, grow greens and herbs only.
Most crop lists are written from the seed catalogue outward. This one is written from your space inward. The order that matters is light first, then pot size, then how much attention you can honestly give a plant on a Tuesday evening in August. Sort by those three and the list gets shorter, which is the point. A short list you can actually grow beats a long one you abandon in July.
What makes a crop worth a pot
Four traits separate the crops that thrive in containers from the ones that merely survive. A compact or shallow root system, so the plant is not fighting the wall of the pot from week three. A short time to first harvest, so you get feedback while your interest is still high. A cut-and-come-again habit, so one plant yields ten times instead of once. And enough value per square foot to justify the mix, the watering, and the space on a small balcony.
Score any crop against those four and the answer is usually obvious. Lettuce scores four out of four. Sweet corn scores zero. Most crops sit somewhere between, and the interesting cases are the ones that pass on three traits and fail on one, like a full-size tomato: high value, good habit, quick enough, and a root system that will outgrow anything under 10 gallons.
The honest trade-off underneath all of this is that a container will never out-produce a bed of the same footprint. The soil volume is smaller, the water swings harder, and the roots hit a wall. So grow the things you pick often and eat fresh — the handful of basil, the salad, the beans you snap off standing up — and buy the storage crops. Nobody has ever regretted not growing their own onions for winter.
Choose in this order: light, then pot size, then crop. Count the hours of direct sun your space really gets, decide the biggest pot you are willing to lift and water, and only then open the seed catalogue. Doing it in the other order is how people end up with a sad tomato in a 3-gallon pot on a north-facing balcony.
Start with these eight
If you want a near-guaranteed first season, grow these eight and nothing else. They forgive irregular watering, small pots, imperfect soil, and the two weeks you forget about them. Every one of them will give you something to eat within eight weeks, and most will keep giving for months after that.

Weeks to first harvest are measured from transplant for basil and chives, and from sowing for the rest.

Herbs, and which ones can share
Herbs are the highest-value crop in any container garden, because you buy them in wasteful plastic packs and use three leaves at a time. Most need only 6 to 8 inches of depth, which means they fit windowsill-scale pots. The one thing to get right is grouping: herbs share a pot well only when they want the same water and the same soil.

Four rules cover almost every herb decision. Mint always gets its own pot, because it spreads by runners and will take a shared container within one season. The Mediterranean group — rosemary, thyme, oregano and sage — wants a gritty, fast-draining mix and full sun, so add extra perlite or coarse sand to the standard 2 parts potting mix, 1 part compost, 1 part perlite blend, and let them share happily. Basil and Thai basil are frost-tender, so they either come indoors or end with the season. And cilantro and dill bolt the moment it gets hot, so sow them for cool weather and accept that a summer sowing will flower before it feeds you.
Leafy greens and cut-and-come-again crops
Leafy greens are the best value you can get from a container, full stop. They are shallow-rooted, fast, tolerant of part sun, and they yield repeatedly rather than once. A single 3-gallon pot, sown thickly with a mix of leaf lettuces, will feed one person salad for weeks if you harvest it correctly.
Harvesting correctly means taking the outer leaves and leaving the growing centre intact. Cut or snap the three or four largest leaves from each plant, work around the pot, and come back in four to six days. The plant keeps its root system and its energy, and pushes new growth from the middle. Pulling whole plants ends the harvest; cutting outer leaves extends it by a month or more.
Beyond lettuce, spinach and mustard greens work the same way and both prefer cooler weather. Bok choy is quick, needs 6 to 8 inches of depth, and can be cut whole or leaf by leaf. Chard and kale are the workhorses, at 8 to 12 inches deep, and they produce for months rather than weeks. For a continuous supply of baby greens, sow a new small pot or a new corner every seven days rather than sowing everything at once.
Root crops, where depth is the whole question
With root crops, depth is not one factor among several, it is the factor. Everything else is negotiable. If the pot is not deep enough, the root deforms, forks, or stays small, and no amount of feeding fixes it.
Carrots have to be matched to the variety rather than to a single number. Short, stubby and round types are bred for shallow pots and will do fine in 8 inches. Long tapering types need 10 to 12 inches (25 to 30 cm) or more, and if you only have 8 inches, choose a different variety rather than hoping. Thin to about 3 inches apart once seedlings are up, because crowded carrots stay pencil-thin. Beets want 8 to 10 inches and about 4 inches between plants. Radishes need only 6 to 8 inches and are the fastest crop in this whole article, ready to pull in three to four weeks.
The other thing root crops care about is texture, not richness. A loose, uncompacted mix lets a root swell evenly; a dense or over-firmed one makes it fork. Fill the pot, water it once to settle, and top it up rather than pressing it down. High-nitrogen feed makes leafy tops at the expense of the root, so go light. Alliums: the patient crops
Alliums ask for time rather than skill, and garlic asks for the most of all. Planted in autumn at 8 to 10 inches deep and about 6 inches apart, it sits through winter, grows in spring, and is harvested the following summer. That pot is occupied for most of a year, which is a real decision on a small balcony. If space is tight, grow something faster and buy your garlic.
Shallots follow the same autumn-or-early-spring pattern at 6 to 8 inches apart and reward you with a cluster from each bulb. Leeks need 10 to 12 inches of depth and a long season, so start them early if you want anything thicker than a pencil. Scallions are the exception in this group: quick, shallow at 6 to 8 inches, happy in the gaps and edges of other pots, and best sown in succession every three weeks so you never run out.
Fruiting crops, and the pot size reality
Fruiting crops are possible in containers, but they are where most container gardens go wrong, and the cause is almost always a pot that is too small. A plant that has to build a stem, leaves, flowers and fruit needs volume, light and steady water in a way that a lettuce simply does not.

All of these need 6 or more hours of direct sun and steady moisture. Fruit set fails first when either one is short.
Support has to go in at planting, not later. Pushing a cage into an established root ball tears roots, and a plant that has already flopped never straightens properly. Put the stake, cage or trellis in the pot on the day you plant, even though the seedling looks absurd inside it.
A full-size tomato in a 3-gallon pot is the single most common disappointment in container gardening. The plant grows fine for six weeks, then the pot dries out twice a day, the leaves yellow from the bottom, blossom end rot appears on the first fruit, and the harvest is four tomatoes. Give it 10 gallons, or grow a cherry or dwarf determinate variety in 5.
What can you grow in shade?
Under three hours of direct sun, every fruiting crop is off the table. That is not pessimism, it is arithmetic: flowers and fruit are expensive for a plant to build, and the energy comes from light. No fertilizer, no soil amendment and no product substitutes for it.
What does still work is worth having. Mint thrives in shade and is one of the few plants that genuinely prefers it. Chives, parsley and chervil all crop reasonably at three hours or less. Lettuce and the leaf crops tolerate low light, though you should expect them to grow more slowly and stay softer and thinner than the same variety in sun. Sow more thickly and harvest younger to compensate.
If the light is under two hours, be honest with yourself and stop trying to farm it. Ferns, hostas, ivy and shade-tolerant ornamentals will look good all season in a spot where a vegetable would only look apologetic. A beautiful shade planting is a better outcome than a failed food crop, and it costs less in water and disappointment.
Cool-season and overwintering crops
Roughly half the growing year gets skipped by most container gardeners, and it is the half that needs the least work. Kale, chard, carrots, leeks, parsley, garlic and scallions all hold through cold weather and resume growing in spring, which means a pot that would otherwise sit empty from autumn to April is producing or waiting to produce.
The mechanism to understand is day length. Once days get short, growth slows to nearly zero regardless of temperature, so the goal is not to grow through winter but to establish the plant before winter and let it wait. A kale plant that reaches a decent size before the days shorten will sit through the cold and take off again as light returns. One sown too late will simply sit small and never catch up.
Containers swing colder than beds, because the root ball is exposed on all sides rather than insulated by the ground. Move winter pots against a building wall, into a corner, or under an overhang, and group them so they shelter each other. Keep the drainage holes clear and lift pots onto feet if they sit in puddles. Winter wet, not winter cold, is what kills most overwintered container plants — waterlogged mix and frozen roots are a different problem from a cold night, and one of many covered in why container plants die.
Keeping the pot working: succession planting
Succession planting is what turns a pot into a supply rather than an event. Instead of sowing a whole packet at once and getting twenty lettuces in the same week, you sow a small amount at a fixed interval so something is always coming ready. The intervals below are the ones worth writing on the back of your hand.

Sowing intervals are only one of four succession moves. The second is staggering varieties by maturity date, so an early, a mid and a late variety sown on the same day ripen weeks apart. The third is replacing a finished crop immediately: the day the radishes come out, something goes back in, because an empty pot in July is wasted capacity. The fourth is growing the same crop for different seasons, like a spring lettuce variety and a heat-tolerant summer one.
Two cautions about the numbers on a seed packet. First, days to maturity is measured from different starting points depending on the crop and the packet — sometimes from sowing, sometimes from transplant — so check before you plan around it. Second, those numbers assume long days and warm soil. A 45-day crop sown in late summer will not finish in 45 days; as light and warmth drop, the same crop can take half as long again.
Flowers that earn their pot
A flowering plant beside your fruiting crops is not decoration, it is yield. Cucumbers, squash, beans and tomatoes all set better fruit when pollinators find the balcony, and on a fourth-floor terrace they need a reason to come up. One or two flower pots do more for a container harvest than another bag of fertilizer.
- Nasturtium — draws aphids away from beans and squash, and every part of it is edible, with a peppery bite in the leaves and flowers.
- Sweet alyssum — a low carpet that attracts hoverflies, whose larvae eat aphids. Good tucked at the edge of a larger pot.
- Calendula — long flowering, pulls in bees and hoverflies, and the petals are edible in salads.
- Borage — one of the strongest bee magnets you can grow. The flowers taste faintly of cucumber. Give it its own pot, it gets big.
- Bachelor's buttons — easy from seed, feeds bees over a long season, edible petals.
- Violas and pansies — cool-season colour when nothing else is flowering, and the blooms are edible.
- Anise hyssop — perennial, drought-tolerant, covered in bees for weeks, and the leaves make a good tea.
- Marigold — deters some soil pests and is tough enough to survive the corner of a pot nobody waters carefully.
What not to bother growing in a container
Some crops fail in pots for structural reasons, not for want of care, and knowing which ones saves a whole season. Each of these has a specific reason rather than a general verdict.
- Sweet corn — wind-pollinated, which means it needs a block of many plants standing together to set full ears. Three plants in a pot give you three half-empty cobs.
- Winter squash and pumpkins — the vines run 10 feet or more and the fruit takes months of steady water. A pot cannot hold the root volume the plant needs to finish.
- Main-crop potatoes — perfectly growable in a large sack, but a whole sack of mix and four months of watering yields roughly one dinner. The value per square foot is the worst on this list.
- Melons — same problem as winter squash, plus they need consistent heat and water to develop any sweetness. Underwatered melons are bland.
- Asparagus and rhubarb — both occupy the pot for years before a real harvest, asparagus for three seasons at least. That is a long lease on a small balcony.
- Full-size brassicas — cabbage, broccoli and cauliflower need at least 5 gallons each and 12 to 18 inches of depth. In anything smaller they bolt or make a token head. Grow kale instead.
